Salad Bar Strategy: Building a CKD Plate at the Bar
20 foods rated from this table
What to know about CKD at the salad bar
The salad bar looks like the safe buffet and plays differently for CKD: the greens are friendly, but the build decides the numbers — the dressing ladle is the sodium event, the cheese and cured-meat toppings pile phosphorus and sodium into a nominally healthy bowl, and the bean-and-chickpea trays carry potassium figures their vegetable neighbors do not. The bar rewards a deliberate build order.
The build order that works
The sequence: greens and the crunchy vegetables (cucumber, carrot, the raw rows that rate friendly) as the base; a protein from the friendly-to-moderate tiers (the chickpea tray is potassium-dense, the egg and grilled-chicken rows are the steadier picks); the cheese and bacon-bit trays as garnish decisions, not base layers; and the dressing on the side, where the ladle's sodium is at least visible. The database rows behind each tray show which station is doing the nutritional work.

- Dressing on the side, always — the ladle version pours more sodium than the salad earns.
- Build the base from the raw vegetable rows first; the database rates them friendly across the board.
- Treat the cheese and cured toppings as seasoning, not structure — that is where the bar hides phosphorus.
